2 lbs. Cooking Apples or 1-2 lbs. Tinned Pie Apples 2 Cups Brown Breadcrumbs 4 Thin Slices Brown Bread 1/2 tspn. Mixed Spice or Cinnamon 4 tblspns. Syrup 4 tblspns. Butter 2 tblspns. Brown Sugar 1 tspn. Grated Lemon Rind | Butter a baking dish and line with fingers of buttered brown bread, with the buttered side downwards. Put a layer of apple at the bottom of dish, sprinkle with sugar, lemon rind, crumbs and a little spice. Repeat the layers until the dish is full and all these ingredients have been used. Dissolve syrup in a cup over hot water and pour on top of the mixture. Cover with foil and bake for 30 minutes in a hot oven. To Serve: Invert onto a hot platter and serve with hot custard or pouring cream. |
