Poor Man's Pudding

4 tblspns. Flour  
4 tblspns. Butter  
4 tblspns. Sugar  
4 tblspns. Apricot Jam  
1 Cup Milk  
1 tspn. Bi-carb.  
Pinch Salt.
Add Bi-carb. To the milk and leave to stand for a while. Add sugar to the flour and after mixing well, add the milk and soda.Stir well and add the jam, stirring again.Lastly add the butter melted in a saucer and the salt. Place the mixture in a baking dish and cover with a lid and bake pudding in a pan of water in a moderate oven-350 o for 30 minutes.Serve hot with custard or a lemon sauce.
