Hot Cross Buns  
 
Ingredients
 
Method
 
1 lb. Plain Flour  
1 Cake Yeast  
2 - 4 oz. Dried Fruit  
2 oz. Butter  
2 tspn Candied Peel  
1 tspn Mixed Spice  
Pinch Salt  
1/2 Pint Lukewarm milk
Rub butter into sifted dry ingedients. Cream yeast and sugar with a little amount of the milk. Add the rest of milk and stir yeast mixture into a well in the centre of the flour. Mix well and then knead until smooth. Cover and leave in a warm place until doubled in bulk. Knead again. Shape into buns and place on a greased baking sheet. Mark crosses on top. Leave to prove for 15 minutes and bake at 425 o F for 15 to 20 minutes. As soon as you take them out, brush them sugar and water glaze: 1tbspn. Sugar mixed with 1 tbspn Water.
