Celeriac & Orange Salad

2 Large Celeriac Roots  
Juice 2 Lemons  
1 tblspn. Salt  
3 Oranges Peeled (Pithed and Sliced)  
1/2 Cup Broken Walnuts  
1/2 Cup French Dressing  
1 Large Teaspoon Sugar  
1 tspn. Poppy Seeds
Cut celeriaac into match-like strips after peeling. Cover with cold water and allow to stand. In a large saucepan put 1 quart boiling water, add lemon juice, salt, celeriac and bring to the boil and cook 4 minutes or until just tender. Drain, cool. When quite cold add orange slices, nuts and dressing. Toss, chill and serve.
