Permesan Sauce

Method
 
1 Small Onion Minced  
1 tspn. Flour  
1 tblspn. Carrot Grated  
1 tblspn. Permesan Cheese Grated  
2 tblspns. Butter  
1/2 tspn. Mustard  
1 Cup Brown Stock  
Salt  
Pepper.
Fry onion and carrot in butter, add flour and allow to brown while stirring. Add stock and seasoningand simmer for 5 minutes. Place over steam and stir in the grated Parmesan, stirring until the cheese is well blended into the sauce.
