12 lbs. Tomatoes 2 - 1/2 lbs. Onions 1 tblspn. Ground Ginger 1 to 2 Grated Nutmegs 1 tspn. Pepper 1 Clove Garlic 7 tblspns. Salt 1 Cup Vinegar 1 Cup Brown Sugar Bouquet Garni | Cut tomatoes and onions in slices. Crush garlic. Add seasoning and boil for two hrs. on a slow fire. Pass through a sieve and let cool. Add 1 cup vinegar, 1 cup sugar and cook until thick. Put in bottle and when cool cork. |
