2 oz. Grated Cheese  
2oz. Fine Breadcrumbs  
2oz. Flour  
2oz. Butter  
1 pinch Salt  
1pinch Cayenne.
Mix all the dry ingredients together.Knead in the butter till all is combined into a smooth dough. Add no liquid. Fold into a paper about 12" long and equal in width to the lenth required for a cheese staws. Add no flour. Fold up neatly and roll until the stip is of a uniform thickness. Unfold very carefully and cut into neat fingers. Bake in a moderate oven until pale brown.
