Rice Cream  
 
Ingredients
 
Method
 
1/3 Cup Rice  
2 Cups Water  
1/2 tspn. Salt  
1 Cup Drained Apricot Slices  
1/2 Cup Cream  
Nuts or Grated Chocolate
Cook until tender: 1/3 Cup rice in 2 cups water, to which 1/2 tspn. Salt has been added. Drain rice and rinse under cold water. Add 1 cup drained apricot slices. Whip 1/2 cup cream and fold into rice mixture. Chill in refrigerator. Serve topped with nuts or grated chocolate.
