Lemon Filling  
3 tblspns. Golden Syrup  
1 Cup Hot Water  
2 Rounded tblspns. Cornflour  
1 Lump Butter  
Juice and Grated Rind of 1/2 Lemon
Boil syrup, water, rind and juice together. Add cornflour mixed with a little cold water to a paste and boil for a few minutes till smooth and thick, stirring all the time. Remove from heat and stir in butter. Leave to cool.
