Orange-Coconut Topping

1/2 Cup Coconut  
Juice Orange  
1 tblspn. Butter  
1 tblspn. Castor Sugar  
1 tblspn. Apricot Jam or Marmalade  
Coconut Mixture  
7" Cake
Soak 1/2 cup coconut in juice of an orange for a little while. Cream 1 tblspn. Butter and 1 tblspn. Castor sugar and add 1 tblspn. Apricot jam or marmalade. Mix into the coconut mixture. Spread over a cold 7" cake and put under the grill to brown lightly.
