Easy Caramel Icing

Method
 
1 1/2 oz. Butter  
2 oz. Brown Sugar  
5 oz. Sifted Icing Sugar  
3 dssrtspns. Milk  
1 1/2 tspn. Lemon Juice
Place butter and brown sugar in a saucepan, stir over low heat until simmering and continue simmering for exactly 4 minutes. Add milk, bring to boil, cook. Pour onto sifted icing sugar, add lemon juice, and mix well. Pour onto cake, sprinkle with nuts and allow to set.
Variations:
Add 1 oz. Grated dark chocolate, or add 1/2 tspn. Coffee essence, or sift 1/2 tspn.. Instant coffee with the icing sugar.
