Apricot Chutney  
 
Ingredients
 
Method
 
3 lbs. Fresh Apricots  
1/2 lb. Onions  
1/2 lb. Raisins  
1/2 bottle Vinegar  
1 - 1/2 lbs. Sugar  
1 tspn. Mustard  
2 tspns. Salt  
1 tspn Coriander  
1 tspn. Curry Powder  
1 tspn. Ground Ginger  
1/2 tspn. Cayenne
3 lbs. fresh apricots, 1/2 lb. onions, 1/2 lb. Raisins
Mince the above three ingredients together.
Then add:
1/2 bottle vinegar, 1 - 1/2 lbs. sugar, 1 tspn. mustard, 2 tspns. salt, 1 tspn coriander, 1 tspn. curry powder, 1 tspn. ground ginger, 1/2 tspn. Cayenne
Mix well and boil very slowly for about 2 hours, until thick.
