Mango Chutney

3 lbs. Half Ripe Mangoes  
1 Pint Vinegar  
1/2 tspn. Ground Ginger  
4 Cloves Garlic  
2 oz. Bruised Mustard Seed  
1/2 lb. Sugar  
2 oz. Chopped Almonds  
1/2 lb. Dried Peaches  
1/2 oz. Dried Chillies
Peel and slice the mangoes. Sprinkle with 1/2 tspn. Salt and put in the sun to dry a little. Soak peaches for two hours and chop finely. Mix all the ingredients and boil until thick. Allow to cool, then bottle.
