Mint Chutney

Method
 
25 Sprrigs Mint  
1 Medium Onion  
5 Large Sprigs Parsley  
2 tblspns. Sugar  
3 tblspns. Lemon Juice  
Salt  
1/4 tspn. Cayenne Pepper or Chillie
Wash and gently dry mint and pull all the leaves from the stalks. Slice or dice onion finely and pund mint, onion and parsley together with the lemon juice. Add salt, sugar and cayenne or chilli while blending. Serve this chilled. Will also keep a day or two if chilled.
