Curry Sauce

2tblspns Chopped Onion  
2 tblspns Chopped Apples  
1 oz. Rice Flour  
1 oz. Butter  
1/2 tspn Curry Paste  
1 oz. Curry Powder  
2 oz. Sultanas  
1 pt. Water  
Lemon Juice  
Salte to taste  
1 tblspn. Chutney or Plum Jam.
Melt butter in pan, fry onion lightly. Fry apple, then fry the curry powder thoroughly and lastly add the flour, mixing well. Cook for a few minutes, then pour the liquid gradually and add the salte to taste. Bring to the boil and skim. Add lemon juice , curry paste and chutney or jam. Wash the sultanas and add to the sauce, put on the lid and simmer for 1 hour, stirring often. Use as desired.
