1 lb. Sour Apples 4 oz. Sugar 1oz. Butter 1 tblspn. Cider Vinegar Juice and Grated Rind of 1 Lemon 1 oz. Cornflour 1 oz. Sultanas 1 Pint Water 2 tblspns. Milk 1 oz. Currants. | Chop the apples and cook with the juice and rind of lemon. Pass through sieve when soft, then return to pan with the water, vinegar, currants, sultanas and enough sugar to taste. Cook gently until the fruit is soft, then thicken with the cornflour blended with the milk, and stir in the butter. Cook for 5 minutes. |
