6 oz. Flour 6 oz. Butter 1/4 tspn. Cream of Tartar Pinch Salt Soda Water as required. | Grate butter into flour, mixed with salt and cream of tartar. Mix with sufficient soda water to make a soft dough. Dough can be used immediately, or wrapped and kept in the 'fridge. It will keep for a week. OR Cut 1 lb. Butter into 1 lb. Flour, sifted with a pinch of salt. Mix with a small bottle of soda water. If time permits, roll and fold three times chilling in between.Or chill at least 1 hour before using; rol out thinly. Bake at 450 o F. |
